淖即為泥，也形容此菜綿軟順滑之感
這道名菜幾乎失傳，目前只有少數川菜名家和親傳弟子尚且製作此菜，但因衡量經濟價值，也鮮露技藝。
說是用三種食材，以刀工製作再一鍋快炒，出來的質感像雪花，風味上有點像炒蛋白，口感及風味遠胜過炒蛋白，吃虾不見虾，鮮味十足，的確是神巧菜品，驚艷。
