爽記雞卷是台北最被低估的美食餐廳，被低估原因有三：
Chicken rolls of Song maybe the most underestimated reataurant in Taipei. There’re 3 reasons that they became the underdog of Taiwanese gourmets:
一、餐廳位在菜市場巷內深處，離捷運站近卻常讓人找不到。
1.Chicken rolls of Song located in the deep of a small alley near a traditional market where no foreign tourists could find the place.
二、說他們是「早午餐概念」台灣美食，一點不為過，每周營業五天，從早上七點半營業到中午一點半，除了周末，其餘營業時段對朝九晚五上班族消費者極不利。
2.The restaurant is a “Brunch” concept restaurant. Their opening hours : 07:30–13:30.
三、「雞卷」做為餐廳名稱，比「滷肉飯」做餐廳名的台灣小吃名店，名稱上吃了虧，畢竟在日、韓文觀光指南上，「滷肉飯」已是一個到台灣必吃的小吃，而「雞卷」還不是。
3.Using “Chicken rolls” as their name is a shortcoming when other famous Taiwanese restaurants took “Stewed Pork with rices” as their names. Stewed Pork with rices is a famous dish in many Taiwanese touring guides in Japanese or Korean but Chicken rolls is not.
不過，辛勤老板夫婦不在乎被低估，認真做用料多的口碑，讓他們幾乎每天賣到提早收店。
However, the hard working couple owned the restaurant didn’t care that they was underestimated.They already sold out everything everyday.
「雞卷」原是使用約三十公分直徑的似圓豆腐皮包剩菜後，再下鍋油炸切片的農家節儉菜，內餡是台灣剩菜常見的豬肉蔬菜等。稱為「雞」卷，是因為台語「雞」與「多」諧音，而雞卷實為「多出剩菜之卷」的意思。
The dish,Chicken rolls in Taiwan is not made by chicken. In early days, poor families fried leftovers rolls wrapped in Tofu & named this dish as Taiwanese Chicken Roll. But now restaurants cooked this dish using various ingredients to establish their own distinguishing features.
爽記雞卷招牌菜，當然是純手工雞卷，特色是荸薺非常多，內餡揉進的料，都有豬肉高湯增味，外皮炸得香脆、恰到好處，即使不沾醬，滋味也很好。
“Chicken rolls of Song”,the dish made with pork,carrots & water chestnuts & fried it into a perfect crispy bite. You can taste their deep pork soup stock flavor in it.
有人推薦到爽記雞卷點用滷肉飯做主食，也不錯，因為他們在菜市場內得到最好的豬肉貨源，滷肉跟高湯均佳，但我反而推薦他們的乾麵，上面也會有跟滷肉飯一樣的滷肉，但拌著品質甚佳的酸菜跟青蔥，一口麵能嚐出這家店烹調理念：簡單、取肉鮮、酸帶味。
Someone loved their Stewed Pork with rices. But I recommend their dry noodles with special sauce that you can taste the same stewed Pork & pickled vegetable. The sour of pickled vegetable brings out the flavor of stew pork sauce as a great balance.
有人誤以為菜市場巷裡店家不注重內裝舒適度，爽記雞卷內部極其簡潔、有空調，因為生意太好常需跟其他客人併桌，但用餐氣氛很好，最好周末早上十一點來，如果超過十二點半，常有些手工做的料理會賣完，雞卷尤其熱門。
The deco of the restaurant is simple but comfortable. Air conditioning keeps all disturbing smells out. And you might have to share table with somebody else as too much customers coming in. The best time to come to this restaurant is AM11:00.
爽記雞卷，是愛上台灣菜市場巷內美食非常好的起點。
